Momentum won't help you here. First off the mass differential is so great you can't measure the effect the motorcycle produced to the truck center of mass. It was something, for momentum to be conserved, but certainly not quantifiable. Essentially the equation will reduce to the post-impact speed equals the pre-impact speed. And that isn't correct. The post-impact speed will be a reflection of the rebound velocity (restitution coefficient, mechanical friction values, etc) but does not indicate accurately the closing speed (which in this case is the approach speed of the m/c). If you could compute the damage speed (essentially EBS in this case) you could add it to the rebound speed and get your delta v.

delta v1 = v1 - (- v1')

v1 = delta v - v1' = Approach speed. However, you're really back where you started and that's how to compute the EBS.

You are going to have to look for outside sources to confirm anything you come up with. Witness statements, injury patterns, something.
